Keto Moroccan Chicken Soup

I know it’s fall somewhere.  Right now in Florida we are having record-breaking temperatures – my car read 101F yesterday! And with Fall comes the return of soup. Warm, comforting, healthy and make-ahead.  What could be better?

I have had a variation of this soup in my ReFresh Program and it is always the most popular recipe but I wanted to adapt it to my #LCHF or Keto folks.  It can be hard to find veggie-rich soups without potatoes or sweet potatoes so I swapped in vitamin and fiber-rich cabbage. 

I love Moroccan food.  It strikes the perfect balance between warming sweet spices and a little heat.  Most recipes I have found have a lot of dried fruit which can send blood sugar on a bit of a roller coaster so I have focused on the spices here instead.

Definitely follow the final step and add the avocado and squeeze of lemon.  It takes this soup over the top!
