Tahini Roasted Cauliflower

We all have that go-to side dish that is super simple you can make it with your eyes closed.  The one that’s a weeknight staple but also delicious and unique enough to impress company.  This Tahini Roasted Cauliflower is just that dish. The tahini adds an unexpected flavor that pairs so well with chicken, seafood and even lamb if you are fancy like that.  Make sure you roast it until it is soft and beautifully charred. Trust me, we’ve converted non-cauliflower lovers with this deliciousness.

From a nutritional standpoint cauliflower is a Rockstar. A cup of cauliflower has more than 91% of your daily vitamin C and is an excellent source of fiber!  You’re probably seeing cauliflower everywhere right now – as pizza crust, replacing rice and even in smoothies.  There is good reason for this, studies show that the sulphur-containing compounds in cauliflower (and other cruciferous vegetables) can help increase the function of the liver, produce beneficial enzymes and even help prevent some forms of cancer.

Tahini Roasted Cauliflower
My go-to side dish that is super simple with unexpected delicious flavor that pairs well with chicken, seafood and even lamb if you're in to that.
Ingredients
  • 1 large or 2 small heads cauliflower
  • 1/4 cup organic tahini (sesame paste)
  • 1/2 juice of lemon
  • 1 tsp paprika
  • 1 Tbsp olive oil
  • to taste sea salt & pepper
Instructions
1. Preheat the oven to 4252. Cover 1 or 2 baking sheets with parchment or foil and drizzle with a little coconut or olive oil to prevent sticking.3. Whisk together the tahini, lemon juice, paprika, olive oil, salt and pepper in the bottom of a large mixing bowl. Thin the mixture with a little water if it is too thick.4. Add the cauliflower to the bowl and toss to combine. You may need to get your hands dirty for this part to fully coat the florets.5. Spread onto prepared baking sheets. Do not crowd the pan you want the cauliflower to have room to brown all over.Roast for 30-40 minutes; stirring after 20 minutes. The cauliflower should be tender and roasted.
